From port 8080 that you use for accessing the web UI I assume you are using the Hydrogen release of OpenDaylight, which uses Tomcat. The resources you mention are spread out over many .jar files that are loaded dynamically by OSGi. Some are in tomcat related bundles, others in Sping Framework related bundles, others yet (ODL specific) are in org.opendaylight.controller.web-0.4.1.jar for example.

For example, if you are looking for all .png files stored in the .jar files, you could run this oneliner:

for i in *.jar; do unzip -l $i | grep -i png && echo $i; done

inside the plugins/ directory.

Note that .jar file are just .zip files with some extra information in the header.
